Ingredients
  

  • 200 g Pasta spaghetti or linguine
  • 2 Lemon juice and zest
  • 2 tbsp Olive oil extra virgin
  • 2 cloves Garlic minced
  • 2 tbsp Fresh parsley chopped
  • optional to taste Parmesan cheese grated
  • 1 cup Pasta water reserved

Instructions
 

  • Boil salted water in a pot and cook pasta al dente. Reserve 1 cup of pasta water before draining.
  • In a pan, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  • Add lemon juice and zest to the pan, then toss the cooked pasta into the sauce.
  • Add pasta water a little at a time to emulsify the sauce. Toss to coat the pasta.
  • Garnish with fresh parsley and grated Parmesan cheese. Serve immediately.

Notes

Feel free to experiment by adding shrimp or chicken to the pasta for added protein, or use plant-based alternatives to make it vegan.
